Vegetarianism has been historically associated with types of Buddhism, and the Indian subcontinent. But in the first world it’s often upheld by whiney kids who know better than you.
It’s because we do. We in the first world are incredibly wastefully. And one of the biggest wastes is producing meat. So in a way vegetarians are just trying to even out the amount of resources a human should take. And we are not being selfish or needing special accommodations. It’s only in first world countries that I ask for vegetarian food. If I were in Africa I would never ask for vegetarian food, I would eat whatever I was given because they use way resources (probably not enough).
We will outlive you because our cholesterol is lower (as long as we protein up). And I will make sure that I outlive so that I can quit being a vegetarian and eat your remains.
